My tasty bruschetta. A lovely and tasty alternative to the original! Serve it with a side of crusty bread or cut the carbs completely and serve with some grilled chicken or even a nice steak. Some lamb or a bit of pork and it’s a great side salad too!
Ingredients
4 firm tomatoes
1 red onion
8 pitted olives
500g feta cheese
8 capers
1/4 cup fresh chopped parsley
1 tablespoon basil pesto
1/4 cup olive oil
1 tablespoon smoked paprika
Salt and pepper to taste
Method- chop all these ingredients: 3 or 4 firm tomatoes into cubes, 1 red onion, 8 or so pitted olives (more if you like), 250g-500g block good quality feta cheese, 8 or so capers. Add 1/4 cup of fresh chopped parsley, a good tablespoon of basil pesto, roughly 1/4 c good quality olive oil, 1 tablespoon of smoked paprika and a good seasoning of salt and pepper. Mix really well and leave to sit in the fridge approx 2 hours before serving so the tomatoes let it some of their natural goodness. Before serving mix through another handful of fresh chopped parsley and give it a really good mix. Pop into a serving bowl and top with more parsley to garnish. A very more-ish kind of dish!
