Making frozen vegetables exciting again!

Let’s face it, frozen vegetables can be boring and we have a packet lying around in the freezer for those ‘just incase’ moments. We grumble and groan when we realise that packet of frozen vegetables is all that’s left until grocery shop day. Well grumble and groan no more as I have a recipe for frozen veggies that will knock your socks off!
This is hands down the yummiest way to whip up some veg when all you have is a packet of boring old frozen mix. I always have frozen veg in my freezer for back up and this is the only way I’ll serve them! So good! Once you try it you’ll be hooked too!

Ingredients

1 big brown onion

3 tablespoons olive oil

1 packet of mixed frozen peas, carrot and corn

Salt and pepper to taste

Water (just enough to not quite cover the vegetables)
Method-So dice 1 big brown onion (2 if you like more) and cook in your pot with 3 tablespoons of olive oil until the onion is transparent. Next add a packet of frozen veg and stir it around and coat the veg with the onion and oil. You want to stir it until the veg change from the boring whiteish colour they are to bright and vibrant veggies. Once that happens add enough water to not quite cover the veg and simmer on low until the water almost evaporates and the veg are tender. Add some salt and pepper to taste and it’s a winner!
