Caramelised onion, feta and tomato tart

This is such a lovely tart. It has a wonderful flavour that will leave you wanting more. Perfect hot or cold and a great sharing dish to pack for a picnic lunch.

Ingredients

2 sheets puff pastry (I use store bought because Ist quick and easy but if you would like to make your own by all means go for it!)

4 red onions

3/4 cup raw sugar

1/4 cup  balsamic vinegar

500g block feta cheese

1/2 cup tasty cheese grated

1/2 cup grated parmesean cheese

6 eggs

1/2 cup thickened full fat cream

Salt and pepper to taste

1 tablespoon baby capers

2-3 firm tomatoes 

A handful of fresh washed basil leaves 
Method

Start by spraying a pie dish with cooking spray and lining it with puff pastry that has fork footprints (stab your fork into the pastry multiple times to give footprints). 

Cover with baking paper and put baking weights over the baking paper and bake covered in an oven 180 degrees until golden. You may have to remove baking paper and continue to bake a little to ensure it’s totally golden. 

While that’s going slice some red onion and sweat it out in a pan. Once see through add balsamic vinegar and  raw sugar. Simmer until liquid thickens and pour over cooked tart base. 

Next layer feta cheese, tasty cheese, basil and Parmesan over the onion. Save a little  tasty cheese for the top and a little Parmesan cheese for the eggs (two tablspoons of each should be fine). 

 Now mix in a whisk 6 eggs and 1/2 cup thickened cream and season well with salt and pepper. Whisk together and add some Parmesan cheese and pour over your cheese layer. 

Next layer some tomatoes that have been pat dry on some paper towel over the eggs and add some capers and a little more tasty cheese over the top. Cover with baking paper and aluminium and bake 180 degrees until set.this takes me roughly an hour to ensure it’s perfect. Remove foil and continue to bake until top is golden and you’re done! So tasty and delicious and perfect for summer! Serve with a side salad and make a meal out of it, impress your guests and serve as a side to a BBQ at home or pack in your picnic lunch.
