This cake is very easy to make. It’s my ‘go to’ cake recipe for when those very welcome, but unexpected guests pop around as you can put almost any fruit in the cake and it will taste delicious. My recipe today uses blueberries but some other suggestions would be purée apple, banana, peach, apricot, pear or any type of berry would be delightful.
1 1/2 cups sifted self raising flour
1 cup caster sugar
1 1/2 teaspoons baking powder
A little sprinkle of salt
1/2 cup softened butter
1/2 cup milk
1 1/2 teaspoons vanilla extract (essence will also be fine)
15 -20 fresh blueberries washed and dried
Icing sugar (for dusting on cake once cooked and cooled)
Preheat oven to 180 degrees.
Grab a large mixing bowl and add all ingredients to the bowl.
Mix together with a fork to combine.
Beat together on high speed with an electric mixer for one minute until mixture is well combined and smooth.
Pour mixture into a greased cake pan (I used a 25cm round cake pan) and smooth the top with a spoon.
With your finger press blueberries gently into the cake mixture until half the blueberry is left exposed.
Bake in oven for approx 25-35 minutes. Check cake after 25 minutes. Cake is cooked when a skewer is insterted into the centre and comes out clean.
Cool cake and once cooled dust with icing sugar. I’ve also topped mine with a few more fresh blueberries.
