With Easter less than a week away my preparations have already begun. Easter morning in our home is quiet but filled with fun. My son and husband go on an Easter egg hunt looking for all the chocolate eggs the Easter bunny has hidden while I take photos and video for us to look back on later and have a giggle.
Easter egg hunting is hungry work and what better way to celebrate finding all the chocolate egg than with double chocolate chip pancakes!
An indulgent breakfast for those special occasions this one is perfect for Easter morning and it’s quick and easy to make too.
Ingredients
1 cup self raising flour
1 cup milk
1 egg
1 tablespoon of melted butter
1/4 cup each of milk choc chips and white chop chips
Method
Add flour, egg, milk and butter into a big bowl and whisk together really well. Once there are no lumps and consistency is smooth pour batter mix into a jug (this. Ames it easy to pour batter into the pan to cook).
Grab a pan to cook your pancakes in and add a very light spray of cooking oil before you cook each pancake.
Pour some batter into your hot greased pan. Scatter 6-8 choc chips on top of the cooking pancake and press them down slightly, cook until bubbles form to the surface then flip and cook til golden
Repeat until batter is all used up.
I like to serve mine with chopped strawberries and a sprinkle of icing sugar
