Liona’s chocolate zucchini cake

I have an Instagram account (@its_gourmet_baby) and recently celebrated reaching 2000 followers by running a contest. To play I asked people to suggest a recipe they would like to see me create and the winner would have their suggestion made and named after them! 

Liona from @lionaleedesigns (gorgeous jewellery designer) was the lucky winner of the contest and her wonderful suggestion of zucchini chocolate cake was the winning recipe.

I’ve created a delicious and moist cake and called it Liona’s chocolate zucchini cake in honour of the very lovely Liona. It’s really easy to make and the bonus is it has hidden veggies so that’s a win win in my book.

With Easter coming up I’ve turned my cake into Easter cupcakes


1 1/2 grated zucchini

1/4 cup sifted cocoa powder 

1 1/2 sifted self raising flour

1 cup caster sugar

A little sprinkle of salt

1 1/2 teaspoon baking powder

1/2 cup milk

2 eggs


1/4 cup choc chips

1/4 full fat thickened cream

1 heaped dessert spoon sifted cocoa powder

2 heaped dessert spoons sitting icing sugar
Method cake:

Grate the zucchini and squeeze out excess water. Place in a bowl and add the rest of the ingredients to the bowl

Mix together with a fork and then use an electric mixer to combine well for approx one minute

Pour mix into cupcake patties (half fill each one) or a baking dish sprayed with cooking spray 

I chose to make cupcakes from my mix but you could also make a whole cake too. This makes approx 12 cucpackes or a cake in sized 25 cm baking dish

Bake in a preheated oven on 180 degrees for approx 25-30’minutes 

Insert a skewer into the centre of the cake/s and if it comes out clean it’s done

Allow to cool completely before icing 
Method icing:

Melt choc chips in microwave safe bowl. Add thickened cream and whisk it in to combine

Continue whisking and add the cocoa powder and icing sugar

Ice cupcakes. This makes enough for a blog of icing approx the size of a 20 cent coin on each cupcake. You may need to double this if you are making a cake
