Crunchy noodle salad 


This is my version of a crunchy noodle salad. It is a favourite salad in our home and one I make quite often particularly in the warmer seasons and I love to serve it with some grilled or BBQ chicken for an easy and fast meal during the week. 

Ingredients 

1/2 cabbage sliced thinly

4 sticks celery chopped fine

2 grated carrots

2 sticks shallots chopped fine

1/2 red onion finely diced

1 handful each of fresh chopped parsley and coriander (I realise corriander is a herb that divides the nation, you either love it or you don’t so if you don’t like coriander feel free to leave it out) 

1 100g packet of crunchy fried noodles (these can be found in your local supermarket in the Asian food aisle) use half in the salad and half on top 

1 300ml bottle thousand island dressing 

Salt and pepper to taste
Method

Grab a big bowl and to this place all chopped salad veggies (leaving a sprinkle of parsley and coriander to top the salad if you wish) as well as half the packet of crunchy noodles, salt and pepper and the entire bottle of dressing.

Mix very well and plate up on your favourite serving plate. 

Sprinkle with the remaining noodles, parsley and coriander and serve immediately.
