I love a good side dish. You know the one that’s so good you could easily eat just that and be happy. This is how I feel about my pesto beans.
Ingredients
500g long green beans
1 teaspoon crushed garlic
Salt and pepper to taste
1/4 cup olive oil
2 tablespoons basil pesto
1/4 cup shaved parmesean
Method-Start by washing, topping and tailing some green beans (amount up to you but I usually do about 500g) and pop into a pot or frying pan. Add 1 teaspoon crushed garlic (more if you like it garlicky) and a good season of salt and pepper as well as a good glug of nice olive oil (about 1/4 cup for those who prefer measurements). Sauté your beans until cooked to your liking (eg if you like them crispy this will only take a few minutes, if you like them more well done this will take a little longer) and once cooked turn off the heat and add 1-2 tablespoons of your favourite pesto and mix well. Pop your beans onto a serving dish and sprinkle with some shaved Parmesan. Ohhhhh yehhhhh!
