SALAD! It’s all Greek to me


I love a good salad and this is one of my favourites. It’s easy to prepare and served with a side of grilled meat or chicken it makes a great dinner that’s full of flavour.

My take on a Greek salad goes like this….

Ingredients

1 washed iceberg lettuce chopped

1 cucumber washed and sliced

1 red capsicum washed and sliced

1 green capsicum washed and sliced

2 firm tomatoes, each washed and chopped into 8’s 

500g feta cheese chopped into cubes

1/4 red onion sliced thinly

1/4 cup pitted kalamata olives

The dressing

1/2 cup olive oil

1/4 cup balsamic vinegar

3 tablespoons honey

2 teaspoons dried oregano

A good season of salt and pepper

Method

To make this stunner grab a big bowl or deep platter and start by layering some chopped washed lettuce on the bottom. 

Next layer some sliced cucumber, red and green capsicum and chopped tomatoes. How you chop them is up to you but I try and keep all pieces bite sized if I can. 

Onto that goes some chopped feta and pitted olives and the red onion (if you don’t like onion you can leave it out).

Season with salt and pepper well. 

To make the dressing I used 1/2 cup olive oil, 1/4 cup balsamic vinegar, 3 tablespoons honey, 2 teaspoons dried oregano and a sprinkle salt and pepper. 

Whisk well, pour over the salad and serve immediately. Yum! Grill a little chicken and dinner for the family is done! Please note : If you like your salad really vinegary then add equal parts oil and vinegar. This is enough to serve a family of four as a side.
