The tastiest zucchini slice


Zucchini slice. Such a winner. A little something you can make ahead of time and pop into the freezer for an easy meal or snack. Great cold or warmed up and something you can eat on it’s own or served with a side salad and homemade oven baked chips for example and keep it totally a vegetarian meal. I always have zucchini slice packed in my sons lunch box for those days out and about as I know he has a healthy and delicious meal on hand!

Ingredients

5 eggs

1 cup sifted self raising flour

4 zucchini

1 carrot

1 brown onion

1/4 cup shredded cheddar cheese 

3 tablespoons shredded parmesean cheese

1/4 cup olive oil

2 tablespoons chopped fresh parsley

2 tablespoons chopped fresh dill
Method- to make this gorgeous bit of slice whisk 5 eggs with a cup of sifted self raising flour. Mix that with 4 grated zucchini (squeeze excess water out), a grated carrot, a grated onion, 1/4 cup shredded cheddar cheese, 3 tablespoons shaved Parmesan cheese, a 1/4 cup olive oil and 2 tablespoons each of fresh chopped parsley and fresh chopped dill. Mix together really well and put in lined baking dish (I used a 30cmx20cm tray) and bake in preheated oven at 170 degrees for approx 30 mins or until golden. You can also add some chopped ham for the ham lovers for something different or you can add some corn which is nice too. Try your own remix and let me know how it goes!
